        燒筍

        燒筍也叫筍咸。把鮮筍切成小塊用水煮熟,再加12%食鹽添加劑出筍內水分,繼續猛火煮干呈淡棕色。忌沾滴水,裝捺于缸或長竹筒內可保存一年多。燒筍味脆咸而甜美,為產竹區山民經常菜點,也是集市上緊俏菜品。
