        彭祖益壽雞

        主要原料:本雞制作方法:將本雞宰殺后退凈毛,然后整雞取骨,洗凈等用。再把銀杏、山茱萸、於術、茶葉均用開水燙過,將瘦肉、核仁、筍干、火腿、香菇切成5毫米見方的丁粒,加入調料拌均,裝入雞腹內部。然后將雞頸倒口處用竹簽別住。鍋內放入清水將雞焯一下,撈出放入碗內,再加臨安三寶,加清湯,調料理入籠蒸熟取出將泡好的綠葉假如即成。特色特點:精刀細剔、湯清味鮮、眾寶匯聚、強身健體典故內涵:相傳彭祖晚年居住在山清水秀的臨安,常食山珍特產用以益壽,以臨安山區土生土長的天目本雞為主料,輔以於術、銀杏、藥棗等名貴藥材和天目青頂、筍干、山核桃肉等臨安“藥三寶”、“老三寶”烹制成一道色、香、味、型俱全的菜肴。( 臨安)
