        御膳豆腐

        御膳豆腐俗稱“釀豆腐”。相傳是明朝一位姓黃的廚師創造出來的,至今已有六百多年的歷史。明初,每年把“釀豆腐”作為貢菜送往京城,朱元璋品嘗后,十分贊賞,黃廚師后來進宮當御用廚師。“釀豆腐”的制作辦法精細考察,做時要“把三關”(選料、制作、火候)、“走四步”(做菜壞、打蛋清、下油鍋、熬糖汗汁)。釀豆腐味似櫻桃,外脆內嫩,爽清鮮美,營養豐富,為席上之佳肴。
