        慈菇豬蹄

        連城美食之:慈菇豬蹄

        原料為大慈菇(越大越白越好)、豬蹄、水發魷魚干、紅糖、米酒、蔥姜末、骨湯等。制作時先把慈菇去皮切塊,下鍋煮至八成熟撈出,在清水中沖去苦味,瀝于備用。豬蹄切塊,魷魚切絲,加骨湯煮至八成熟。然后以炒鍋將調料、豬蹄、蔥菇輕炒,下骨湯燜熟即成。食之豬蹄酥爛,慈菇綿糯,鮮美醇厚!

        “慈菇”俗稱“蔬卵”,閩西一帶惟有連城種植,連城人喜食慈菇,“慈菇燜豬蹄”是春節期間城關宴席必備的菜肴
