        魚面、魚片

        魚面是平潭島特有佳肴。以黃魚或馬鮫魚為主料。將魚肉搗成稀糊狀,加少量食鹽與調味品,粘上適量研末薯粉,碾成薄皮,切為細絲煮熟,撈起冷卻。烹調時,配肉丁、蝦仁、蔥段、胡椒粉等佐料,入高湯煮滾即成,色、香、味俱佳,嫩中帶脆,味葷且清。炒烹皆宜。若將薄片切成塊狀,則稱為“魚片”。
