        八珍燜薯粉

        燜薯粉又稱“燜蛋”,是平潭民間傳統佳肴,堪稱一絕。采用精白薯粉攪成糊狀,放在油鍋里煸炒,再加入蝦仁、咸肉丁、蟹肉、蟹黃、酥花生片、梅犁(荸薺)、丁、魚丁、黃花菜、紫菜、蔥花等佐料及調味品,經溫水攪炒成膠狀即成,色晶瑩如瑪瑙。因葷素搭配得當,爽滑嫩軟,十分可口。
