        御帶蝦仁

        【御帶蝦仁】制作歷史悠久,是孔府的家常菜。以大青蝦為主料,去其頭尾,腰間留一殼環,余殼全部去掉,過油后,蝦肉是白色,蝦殼呈紅色,猶如御帶,由此得名。制作時將過油的蝦仁再同海參丁、南薺丁、青豆、蒲菜丁一起炒熟即成。此菜配料講究,色澤絢麗,鮮嫩可口,極得食者贊美。
