        【花籃魚】孔府傳統烤菜。將鱖魚反正兩面切上刀口,正面抹入魚肉泥,反面嵌上火腿片,用豬網油(豬大油表層的網狀薄皮)包好,外面再包上一層軟面皮,上烤爐慢慢烘烤。烤的過程中,魚的鮮汁因有面皮保護不致外漏,網油也可熔化滲透于魚肉中,烤熟后去掉面皮,蘸姜末、香醋而食,為孔府獨具一格的美味。
