        武穴紅燒青魚尾

        選重5公斤鮮青魚一條,取尾部一段約1.5 公斤,配以水發冬菇、冬筍、紅辣椒、蔥、姜、精鹽、醬油、味精、白糖、淀粉、豬油等佐料烹制而成。黃梅青豆炒鱔片將青豆去皮,黃鮮去骨切片,加鹽、醋、醬油、料油、雞蛋清,腌5分鐘。青豆用豬油加木耳爆炒,放入姜末、蔥、白糖、白醋、高湯燒片刻盛起。再放豬油、倒進腌鱔片,加濕淀粉爆炒,放進青豆和調料拌炒即成。
