        雞泥桃花魚

        雞泥桃花魚是湖北宜昌的特色風味菜。桃花魚治凈,納碗,用精鹽、蔥姜水拌勻,腌漬待用。雞脯肉除去筋膜,魚肉治凈,分別剁成茸,盛入碗中,加入兩個雞蛋清、蔥姜汁、味精和豆粉,攪拌上勁,再分別裝入兩個小碗內,將兩個雞蛋黃放入其中一個小碗內和勻,制成兩色雞魚茸。炒鍋上火,摻入雞清湯,燒至快沸時,把兩色雞魚茸分別擠在腌好的桃花魚上面,下入水鍋中汆約五分鐘,用精鹽、味精調好味,然后下入青豆苗,淋入化豬油,起鍋裝碗,即成。雞泥桃花魚成菜后,形似朵朵桃花浮于湯面,雞魚茸鮮嫩,湯清味美。
