        丫口黃鱔

        丫口黃鱔是衡陽的傳統美食。原料:活鱔鲆1000克,蕌頭100克,熟豬油50克,湖之酒50克,胡椒粉1克,麻油1克,大蒜子50克,茶油100克,姜3克,醬油4克,味精一分,細鹽3克,紅椒粉2克。制法:將黃鱔用水洗凈,炒鍋置旺火上,鱔魚入鍋加蓋至死,放茶油100克炒至鱔錢丫口卷團盛碗中。蕌頭打爛切成0、5寸長。大蒜去皮切片,姜切碎,熟豬油50克下鍋燒到五成熟,將蕌頭下鍋炸一下,再放鱔魚卷團,然后放入大蒜碎、湖之酒、醬油、細鹽、姜末、合炒幾下,接著加味精、紅辣椒粉、紅辣椒粉、出鍋盛盤中,淋芝麻油即成。特點:顏色紅中透亮質鮮香。
