        熱鹵燒臘

        這種吃食是梁定遠所創制,他1953年在北街開店,作法是先將雞、鴨、鵝、兔及豬牛肉及內臟、加調料煮到七分熟,撈起后再放入鹵汁鍋內鹵熟。吃時將各種肉食切成塊片,盛在盤子里,再澆上少許熱鹵汁,飲酒而食,便覺鹵食濃郁,百香匯口。
