        嚼雪包子

        嚼雪包子,是1935年城內嚼雪包子店新創的食品。以上等白面5公斤加酵面500克,飴糖250克,蘇打3克,制成包皮,再放入精制餡心包好,置籠內蒸熟即成。餡心精選瘦豬肉5公斤剁細入鍋,炒至散籽對加輔料胡椒粉和味精各15克,白醬油、玉蘭片、醪糟、0甜醬各250克,金鉤、生姜各65克。色白如雪,入口松軟,1950年后,演變為小籠湯包,又稱小籠包子。( 廣漢)
