        棗糕

        棗糕,蒸點,特點:香甜油潤,松軟爽口,色澤棕黃,營養豐富。烹制法:蒸。此品為重慶頤之時餐廳的名點,可作席桌點心。蒸糕時可用黑芝麻點綴。因用蜜棗為主料,故名棗糕。

        雞蛋、白糖攪撣至發泡,放入面粉攪和均勻,再放入切成細顆的豬生板油、蜜棗、瓜元、核桃米、櫻桃、玫瑰等拌成糕漿,入方木格內(糕漿厚1.5厘米),上籠蒸熟,翻于木板上,稍冷后切成菱形,裝條盤。Ag3

        操作要領:蛋漿要撣好,使之發泡呈乳白色、膨脹,放入面粉,拌和均勻,再放進各種配料;蒸時要用大火,用小竹簽插入糕內,不粘糕漿即熟。Ag3
