        海水煮海魚

        白族漁家所做的海水煮海魚,更是別具風味。不到洱海,置身漁船之上,絕難品嘗。白族漁民捕魚之暇,舶船于風平浪靜的港灣,在船上支起林炭火爐,置上銅羅鍋,舀入海水,放入少許精鹽,將捕到的活弓魚去鰓和內臟(不去鱗),即放入鍋中煮熟,另取大碗一只,將用子母火烤焦的辣椒干,揉成細面放入碗內,再放入蔥末、姜米,舀入煮魚的湯,再燒炙鍋底鹽一塊,趁鹽燒紅時放入湯內煅制的辣椒鹽調料,用以蘸弓魚吃。食用時保持魚的原汁原味,十分鮮美,魚肉滋嫩細膩,營養豐富,咸辣香醇,風味雋永,令人難忘。
