        徐有才紅燒黃河鯉魚

        特點:

        肉嫩味香,色紅汁濃。高中檔合一,古城名產,可口經濟。主料:

        活黃河紅尾鯉魚一只(一市斤半重),發海參二兩。配料:

        玉蘭片、水木耳、辣角、生姜丁、豆醬油、菜油、精鹽、蛋清、粉芡、煉大油、料酒。作法:

        1、將海參、玉蘭片切成黃豆大小粒;

        2、把魚去鱗去鰓,順肚剖開,兩面劃成菱形刀花,淋去血污,浸入醬油或鹽水少待片刻,撈出掛上粉芡

        3、將菜油燒熱,把魚放入鍋內不停翻動,待外皮呈黃而未焦時即撈出;

        4、撇開炸油,凈鍋后用煉大油一兩燒熱先放入姜塊、蔥段、精鹽,后放入海參,玉蘭片、木耳,即刻加入清肉湯約半斤,滾開放入炸魚,翻兩次,打上粉芡,再下料酒,豆醬油,待灸成稀糊狀,即可出鍋。注意:火要旺,時間要短。
