        風味清蒸全鴨

        用料:面粉四斤,川鹽四兩一錢,玉蘭片二兩,胡椒粉三分。花椒十五粒,姜五錢,蔥結三根,味精五分,芝麻油五錢。 制法:1、將面粉洗出面筋,和入川鹽、胡椒粉。再將熱水發脹的玉蘭片切成長一至四寸的條,面筋包裹玉蘭條,用紗布捆扎成鴨形盛入碗內蒸。蒸熟后進一步整形,并用黃豆安上眼珠,用梳子按成翅膀。2、將胡椒粉、花椒、川鹽一錢,姜、蔥熬制的湯,加味精、芝麻油灌入盛鴨的碗內即成。 特點:鴨形精巧,有骨有肉,紗布捆扎的痕跡酷似鴨皮,給人以真實感。鴨肉粑嫩,湯魚味美,清香四溢,令人垂涎。( 延安)
