        筏子

        筏子的做法是:先把肥腸用清水(加堿、醋)反復洗至無異味后翻置,再將羊的心、肺、肝、肉剁碎,調入清油、蔥、生姜粉、花椒粉、草果粉、精鹽、味精等佐料拌勻。然后,將滿肚油攤開,放入餡子,卷成筒狀,用線包扎、封口,因其狀如扎羊皮筏子,故名。或者將餡子塞入肥腸,裝滿后封口。最后上籠蒸熟或放入沸水中煮熟取出,切段裝盤上席,有的將筏子切段在油鍋中煎烙至黃脆后裝盤,調上油潑辣子、蒜泥、醋食用。吃時鮮嫩不膩,美味可口,清香四溢。
