        灰是蓬灰,秋霜過后,在沙生蓬棵黃熟將干未干之時,采集投入洼地或預先掘好的燃燒坑內,點燃,待灰燼熔為半流質狀態時,在上面加壓,使其質地緊密,自然冷卻,次日取出,即成粗陶質地的蓬灰。面是用民勤硬粒高筋質小麥磨制面成的精粉,用蓬灰溶液和面,反復揉壓,待醒透后,搟成金黃-的面片,切成細長面條,下鍋水煎,即成黃亮如金的灰面。下飯菜首選區素炒茄辣。炒菜時,加少許西紅柿取汁,佐以麥麩陳醋與蒜泥,酸辣滑爽,誘人食興,食后上癮。
