        炮杖子

        將揉好的面拉開拉細,然后揪寸段于開水中煮熟撈出,用涼水激過,拌菜即食。因形似鞭炮,故名炮杖子。隨著蔬菜種類增多和面食做法的交流,在民間和街頭餐館中,也有面煮八成熟后,撈入炒勺,拌肉絲、寸段蒜臺、蔥絲、葫蘆(蕃瓜)片及各種調味品爆炒面食的,所以又稱干拌炮杖、炒炮杖、炒炮。也有煮熟后撈入事先勾兌好的肉菜湯中,稱湯炮杖。
