        紅燒海螺

        紅燒海螺——把海螺(那種俗稱“挖拉”的大海螺)肉切片,打上刀花,用沸水稍沖涮,再放入多孔勺子中,在沸點熱油里過一下。然后用大醬、蔥、姜、蒜等調料爆鍋,再將海螺肉與冬菇、玉蘭片、木耳一起下鍋略微翻炒,最后勾上濃芡即成。特點是螺肉外觀色紅,口感鮮嫩。
