        煙熏臘肉

        冬至“入九”后,是鄉間農家宰豬熏肉的季節。按部位將豬肉分割成二十多塊,用鹽腌制一至兩日,再煙熏一月左右,便制成煙熏臘肉。熏制過的臘肉,帶有獨特的香味,煮熟后直接食用或者是切薄片用來搭配蒜苗、青椒等炒制都是風味獨特。
