        彌渡風肝

        風肝因切面似蜂窩,又名蜂肝,味香醇厚,是彌渡的又一名特食品,明代中期就有制作風肝。其制作過程是用新鮮豬肝(完整不破損且帶苦膽的豬肝)洗凈,用導管放入肝葉管內加氣,使整個豬肝峰狀膨脹后,灌入用白酒調制好的以紅粬米粉為主的多種佐料混合物,直到灌滿為止,然后加氣輸送,使灌入的佐料均勻分布整個肝體,扎緊管口,掛在陰涼通風處晾干即成。
