        炸蘆花雞

        炸蘆花雞炸蘆花雞因選用蘆葦花盛開時的仔雞為主料炸制而成,故名。制作:首先加工雞子,剔掉雞腿、雞膀里大骨,將肋骨和脊骨截斷,再剁去雞嘴與膀尖和三分之二的雞爪。然后,將雞入鍋煮制。半熟時撈出,用元油、鹽水、料酒將其里外抹勻,腌住使其入味,繼入油鍋炸制,至雞肉爛熟呈柿黃色,撈出放入盤中,撒上料酒、原油、味精兌成的調味料,即可食用。特點:肉質鮮嫩,皮脆,為時令菜肴。
