        白汁羊頭

        白汁羊頭北宋開封已有烹制"羊頭"。"羊頭"即羊頭肉,白汁羊頭屬羊頭肉一種,為開封傳統風味食品,一般在深秋至暮春時節上市。

        白汁羊頭選用肥大上好羊頭,刮毛氽洗后入清水鍋,加入調料袋,用武火攻煮后撈出,剔去骨頭;再入原湯鍋火文火煨燜至肉爛,起鍋后壓實,用涼湯汁刷面,冷卻后即成。食用時切成薄片裝盤,灑上椒、鹽拌勻。其口味鮮香,色澤晶瑩,肥而不膩,為佐酒佳品。
