        桂花大卷酥

        桂花大卷酥:該品原為宮廷御用食品,其特點酥香流油,軟綿適口。后人在制作中加入桂花,故有"桂花大卷酥"之名。該糕點制作,先將精粉、食油加適量水調制成面團,再經擦酥、包酥、下劑、掐劑、包餡后,搟成長形薄片,將前后兩邊向中間折疊,反轉后在中間順長捺一條溝,打三個七星點戳記,入爐烘烤后即為成品。成品表面呈乳白色,有兩條烙花印,皮餡均勻,有明顯層次。
