        以肥瘦紅白相間五花肉為原料,經炸制,上糖色,薄片如紙,以碗扣住蒸熟,所以取名千張扣肉。常見用腌菜,豆豉,梅干菜為扣肉做底。此菜色澤金黃,肉質松軟,味道鮮香,肥而不膩,味道溶爛不糜,咸甜馥香濃郁。相傳于唐代,首創為古江陵地區。減肥愛美的女生,不推薦。
