        頭菜圓子

        魚肉多數采用麻鰱魚,也有用青魚。絞肉機打碎魚肉,放蒜姜末,淀粉等。將雞蛋蛋白蛋黃分離,魚肉蒸制,涂蛋黃,繼續蒸制,泛起魚香,起鍋切片。白魚丸做法一樣,蒸制即可,黃魚丸卻要熱油炸制成型。三種不同口感,配上肉絲,菜中無間道木耳,煮湯盛盤。此菜以吃魚不見魚,魚含肉味,肉有魚香,清香滑嫩,入口即溶,老少皆宜。
