        墨魚燉土雞

        墨魚燉土雞是衢州常山一道滋補的菜品,也是色香味俱全的浙西傳統名菜。每逢夏收夏種和秋收繁忙季節,常山農村都會宰殺一只土雞,然后買些墨魚回來,把墨魚和雞放在一起煲湯或者燉著吃。墨魚燉土雞烹飪工藝不復雜,一般用清水發制墨魚,放入沸水中煮幾分鐘,去除內臟,清洗干凈。再將雞、墨魚分切成塊,砂鍋內一次性盛足清水,將雞塊、墨魚、黃酒、姜等一起放入,大火燒開后,用文火約燉三小時左右,即可食用。
