        蔥燒海參

        蔥燒海參為常見的名貴菜品。制作方法有獨到之處。先將發好的海參,放鍋中燒煮片刻,再將蔥段用豬白油炸至金黃色,撈出后加調料入籠略蒸,去湯汁,留蔥段。將白糖炒至紅色,下姜末,放海參略加煸炒,隨即下入蔥油糊及料酒、清湯、醬油等調料,用旺火燒開,移微火靠去湯汁大半,再改用旺火,顛翻掛芡入盤。另用旺火加蔥油糊和蔥段略煸,撒在海參上即成特點:蔥香濃郁,口味咸甜,軟而不爛。
