        皮卷

        肉糜餡外用漿皮卷成圓形,故稱皮卷。餡料用新鮮豬肉剁成糜,加入黃酒,開洋(干蝦米),淀粉、姜、蔥米、鹽糖適量,攪拌勻,似肉圓之料。然后用匙舀放豆腐皮上,先將兩邊折向中間,然后卷成卷,放蒸笠上,下承小缽,放鍋內蒸熟即可。
