        抄手

        抄手

        抄手又名餛鈍。制作簡單,食用方便,麻辣兼具,既是小吃,又可作主食。制作分皮和餡。抄手皮用

        精制面粉加工而成,每片5厘米見方,其薄如紙,以煮后皮不破,湯不渾為最佳。抄手餡,取豬肉瘦七肥三,或刀剁,或機器粉碎,呈肉泥狀,加少許食鹽、味精、姜末、蔥花等合勻即可。用皮包上制好的餡即成抄手,其形成蝴蝶狀。煮好后配以蔥花、蒜汁、醬油、陳醋、味精、豬油、花椒、海椒等佐料,即可享用。
